Getting an extraction canopy for your commercial kitchen can be a bit of a run-around.
Firstly, most off-the-shelf canopies do not include the fans or ducting required to extract the dirty air out of the kitchen.
Canopies are available in several styles, some more suited to various types of kitchens, such as those specific to Asian-style kitchens.
Canopies generally need to extend at least 10cm further than the cooking equipment underneath, to ensure all steam and smoke is captured.
Canopies are required when the combined power output of your cooking appliances (and dishwasher) is greater than 8kW. This is the legal requirement in most councils.
Canopies can be mounted to the wall, suspended from the ceiling and some free-standing models are also available, designed for smaller, benchtop cooking appliances.
